Monday Minute (Breakfast Egg Muffins)

Playing with post titles. Seeing if I can find something I like to do weekly.

Ham, egg muffins inspired by the ones I've seen at Pinterest.

Preheat: 375
Muffin pan (I used a 12 count regular sized tin)

12 slices of ham
~9 eggs
1/4 cup milk
~4 cups of spinach-chopped

Spray muffin tin with Pam/oil. Push in one ham slice for each spot.
Toss the chopped up spinach with some oil in a pan for about 1 minute to wilt.
In bowl: mix the eggs, milk, cheese and spinach.
(I poured the mixture into a measuring cup with a spout for easy pouring)
Pour mixture into cups-fill to the top of the ham slice.
Bake for 20 minutes.

I am keeping mine in the fridge in some tubberware and they seem good to go. I popped them in the microwave for 30 seconds to heat up in the mornings.

Sunday Warm-Up

It was been a wonderful Sunday because for once I did not have 5 hours of planning to do for work! I'm so free and it's so lovely.

Also there was again, the wonderful Autumn chill in the air this morning. It doesn't last but it is so wonderful.

In addition, pistachios (with their own dollar off coupon).


So how did I do keeping up with last week's plans?

Monday: Did get in a run! (err...1 mile but who's counting). Sanded the shelf/trim too!

Tuesday: Got in the trip for random items, like toothpaste, and bought some other junk of course. It was on not my fault. Also painted bathroom stuff.

Wednesday: Public speaking done! We did alright. Or at least everyone was nice and said we did good. Did get a walk in, but no run.

Thursday: We 'glued' on the shelf and trim for the bathroom. It looks awesome!

Friday: Happy Day! Didn't get too much done but happy.

Saturday: Got a walk in at the husband urging.Then random stuff.

Overall: Productive things were done. So that's good. On to the next week.

Plan for Next Week

Monday: RUN! Daily clean-up. B-day stuff. Bed sheets (wash, put away)

Tuesday: Walk/weights.Daily clean-up. Start on name project

Wednesday: Please run.Daily clean-up.  Continue name project

Thursday: Walk/weights. Daily clean-up. Continue name project

Friday: Walk. Daily clean-up.

Sunday Warm-Up

After just over a month of work starting back, I feel like I am finally crawling out from under the avalanche.

A quick re-cap of what I have accomplished over the last month:

*Morning walks are back! It's nice and eerie out now with only a few street lamps to add to the often misty morning air. Plus sun salutations and working on push ups to wake me up.

*I signed up for 4 races (2-5ks, 1-10k and 1-12k). I plan on signing up for at least 2 more. They are spread out between October to December.

*The husband and I are both a week in on a "diet". I hate using that word, but it is what it is. More veggies and fruits with limited carbs for me. Calorie counting for him. A hungry stomach for both of us, but it is helping with our over indulgence problem.

*House projects are coming along. The garbage can and entry way shelf are done. The bathroom shelf/mirror frame is halfway done. Bushes are planted in the back, along with some grass seed. Though it's been so dry out here that everything is starting to brown. ARG!

Plans for the immediate future:
Monday-Get my butt out there and run
             Birthday cards
             Sand/paint bathroom pieces

Tuesday-Pick up some weights or something
             Store trip to pick up random needs
Wednesday-Steeling my nerves to talk in front of a group of teachers (Ahhhh...I hated Comm. 101 in                    college like everyone else for a reason
                  Run again....and again....and again!
                  Do some craft projects I have waiting

Thursday-DONE with subbing for a class. The happiness cannot be expressed
                Craft projects

           Walk to stretch the legs that probably hurt from my sudden pounce back into physically activity

Saturday-Morning run!
